Mexican Wedding Cakes
1 c. butter
4 to 6 Tbsp. sugar
1 tsp. vanilla
2 c. finely chopped pecans or walnuts
2 c. flour
Powdered sugar to roll the cookies in.
Cream the butter well. Cream in the sugar until fluffy. Stir in vanilla, flour
and then nuts. Mix together lightly until all the flour is absorbed.
Roll small pieces of dough into small balls and place on an ungreased
cookie sheet. Bake at 325 degrees 8 to 12 minutes or until they are
a delicate yellow color. Remove from the sheet while hot and roll in
the powdered sugar.
