Cashew Shrimp
1 c. uncooked shrimp, cleaned, shelled, de-veined, & cut into thirds
1 tsp. soy sauce
1 tsp. dry sherry
1/4 tsp. white pepper
1 tsp. cornstarch
3 tbsp oil
1/2 c. diced bamboo shoots
1/2 c. cooked cashew nuts
2 green onions sliced into 1 inch strips
1 tsp salt
1/2 tsp. sesame oil
Place the cut up shrimp in a bowl and sprinkle over them the soy sauce, wine, pepper, cornstarch, and 1 tbsp vegetable oil. Preheat pan and swirl remaining oil around the bottom and sides. Stir fry the shoots and cashew nuts for 1 minute. Add the onions and shrimp, stir fry for 2 minutes. Finally add the salt and sesame oil. Stir evenly and serve with rice.
