Broccoli Cheese Soup

6 c. water
3 c. broccoli florets
1/2 c. onion, chopped
1 T. chicken bouillon granules
1/2 c. margarine
2/3 c. flour
1 c. milk
3 c. cheddar cheese shredded
salt & pepper

Combine the first four ingredients and bring to a boil.  Reduce the heat.  Simmer covered for 10 min or until veggies are tender.  Meanwhile, melt margarine in a small saucepan.  Sir in the flour.  Cook over low heat until smooth.  Add to broccoli mixture.  Continue cooking, stirring constantly for 5 min. or until mixture is bubbly.  Stir in milk and cheese.  Stir until cthe cheese melts.  Season with salt & pepper.  Serves 6
