Applesauce Fruitcake
This is a holiday favorite at bake sales around our town.
5 c. unsweetened applesauce
2 c. margarine
8 tsp. Soda
4 eggs
4 c. sugar
8 c. flour
2 tsp. Salt
2 tsp. Cinnamon
1 tsp. Cloves
2 lbs. Raisins
2 lbs. Candied fruit mix
1 lb. Walnuts
1 lb. Dates chopped
I use bread pans. Grease and flour the pans. Heat applesauce to boiling; add margarine
and soda. Set aside to cool (or overnight). Put in large bowl, the walnuts, dates,
candied fruit mix and raisins. Put 2 c. flour over this mixture. Toss to coat ingredients.
Beat eggs and add the sugar. Add this to the applesauce mixture. Sift other 6 c.
flour with salt and spices and add to fruit mixture alternately with applesauce.
Bake 20 minutes at 350 degrees, 1 ½ hrs. At 275 degrees.
